Easy Orange Strips

Orange Strips

1 tbsp. white sugar
1 cup plus 3 tbsp. flour
1/4 lb. butter or margarine
2 eggs, beaten
1 cup coconut
1/2 cup chopped nuts
1 cup brown sugar
1 tsp. baking powder

Mix white sugar, 1 cup flour and butter; press in 8 x 8-inch pan. Bake 10 minutes at 350 degrees. Cool. Combine eggs, coconut, nuts, brown sugar, 3 tablespoons flour and baking powder; spread over baked mixture. Bake for 10 minutes at 350 degrees. Cool.

Icing:

1 1/2 cup icing sugar
1 tbsp. butter
Orange juice
Grated orange rind

Mix sugar and butter; add enough orange juice to moisten. Add a small amount grated orange rind. Spread over baked mixture.

Caramel-Pecan Brownies

2/3 cup vanilla caramels
2 tbsp. milk
2 eggs
3/4 cup sugar
1/3 cup butter or margarine, melted
1/2 tsp. vanilla
3/4 cup sifted all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup chopped pecans

In small saucepan, cook and stir caramels and milk over low heat until caramels are melted; set aside. Beat eggs; gradually beat in sugar. Blend in butter, caramel mixture and vanilla. Sift together dry ingredients; stir into caramel mixture. Fold in pecans. Pour into 9 x 9 x 2-inch baking pan. Bake in 350-degree oven for 20 to 25 minutes. Cool; cut into bars.

Yield: 20 bars.

Spicy Butterscotch Thins

3/4 cup flour
1/4 cup sugar
1 tsp. cinnamon
1 tsp. instant coffee
1/2 tsp. ginger
1 cup butterscotch morsels, melted
1/2 cup soft butter or margarine
1 unbeaten egg
1/2 cup salted peanuts, chopped

Combine dry ingredients together and set aside. Melt 2/3 cup butterscotch morsels and butter. Remove from heat. Blend in egg and dry ingredients. Line a 15 x 10-inch jelly roll pan with heavy-weight aluminum foil. Grease foil well and spread with the cookie dough. Sprinkle peanuts and remaining butterscotch morsels over batter. Bake at 300 degrees for 25 to 30 minutes until delicately browned. Cut into bars and remove from the pan immediately. Cool. Store in tightly covered container. Cookies may be frozen. Yield: 3 dozen.
